Good Quality Lamb Shank

First time buying Lamb Shank from you and Although the lamb shank is very good quality, it didn't turn tender as I wanted. It Could be because of the way I cooked it or the type sheep it is from ( Australian sheep, ...). Overall Good experience it was.
