Consistent and good

I've been buying from them for a number of years now, quite a lot of brisket, sirloin, blade, chicken. Consistent across the board. If you're a retail customer and comfortable with breaking down cuts, it's a no brainer. Brisket has been great with only one lighter marble and lower collagen sample in the 10+ I've ordered. Still turned out well each time, especially given most of mine get cured then smoked into pastrami and get an additional steam back to 205. I love being able to put in a bit of work to split my own wings and get better value, particularly when i need 20lb+ of wings. 9

Our family has bought different cuts of meat from Venerica over the last few years. The ordering of the meat was easy and the pick-up was seamless. The meat itself has always been good quality and, when prepared and cooked, has tasted great. The most recent purchase was a brisket. It was so delicious! Will keep returning.

Not for smoking

I have enjoyed everything I’ve gotten from Venerica, but I ordered a packer brisket and it was the worst brisket I’ve ever smoked.

I’ve smoked countless packers over the years but never had a cut with such a thin fat cap and total lack of intramuscular marbling.

I smoked this for 15 hours at 225F, did the Texas crutch and adeed a full mason jar of tallow at the stall, and pulled it at 204F. I had it in the cooler for 3 hours to rest and after all that it was still like eating a piece of shoe leather.

While I’ll continue to order from Venerica, I cannot recommend the brisket if you’re looking for a smoke. I would assume this is ungraded meat to perhaps Choice. Maybe this is suited for braising or grinding in mince; but not for bbq.

I just slow cooked them for a few hours in a pot and they turned out very well

Consistently good brisket

Get my brisket here regularly. Comes fresh and ready to smoke. I don’t bother trimming, just mustard and rub, then smoke for 14-18 hours. Always good
